Дослідження хімічного складу сортів батату, які вирощують в УкраїніResearch on chemical composition of sweet potatoes, which grow in Ukraine

Анотація

У статті проаналізовано обсяги світового виробництва однієї з найважливіших і найпоширеніших бульбоплідних культур – батату, а також умови вирощування та культивування. Відомо багато сортів батату, кожен із яких має характерні смакові якості й зовнішній вигляд. Оскільки не існує офіційної сортової класифікації, тому залежно від сорту та складу ґрунту можуть утворюватися різні за формою та забарвленням бульби, хімічний склад, яких обумовлений сортовими особливостями та умовами вирощування.

У роботі досліджено й проведено детальний аналіз хімічного складу сортів батату, які вирощуються в умовах Лісостепу та Полісся України; а також зроблено порівняльну оцінку із сортами, які культивують в інших країнах. Отримані результати показали, що, попри відсутність батату в реєстрі рекомендованих сортів рослин України, його можна вважати на сьогодні перспективною культурою для вирощування, не тільки на присадибних ділянках, але й у промислових масштабах.

Summary. The volume of world production of one of the most important and most common prolific tuber crops – sweet potatoes, together with growing conditions and cultivation, were analyzed. There are many varieties of sweet potatoes in the world. Each variety has its characteristic taste and appearance. There is no official classification of sweet potato variety. Depending on variety and composition of soil, different bulbes can form different shape (round, oval, prolonged) and color (white, orange, and pink). Chemical composition of sweet potatoes depends on varietal characteristics and conditions of cultivation. A detailed analysis of the chemical composition of sweet potato varieties, which are grown in Lisostep and Polissia regions of Ukraine, was conducted in this article. Comparative evaluation of varieties, that are cultivated in other countries, was made. The received results allowed to state that despite the lack of sweet potatoes in the list of recommended varieties of plants Ukraine, sweet potatoes can be considered today as a promising crop for cultivation, not only in gardens but also at the industrial scale. Research on nontraditional agricultural raw materials, developing of processing technology with maximum preservation of biologically active substances in the finished product, is an important task for creating products with sanitary and prophylactic role.
